I miss my mom's pinakbet. I love the wonderful and colorful mixture of vegetables and the pungent smell of the bagoong alamang¹ mixed with it. I remembered that hubby flew to the Philippines last April to attend Lola's funeral² and brought home with him a jar of bagoong. Luckily, there is still some bagoong left in the fridge. So for dinner, I decided to cook pinakbet.
Let me explain....
1 - Filipino shrimp paste made from minute shrimp or krill (alamang)
2 - hubby's lola died last April 8, may her soul rest in peace

how could I have missed this! been ages since I’ve had pinakbet … mainly because son and hubby aren’t pinakbet fans; but i am! :P
